Deep Frying a Turkey

We're going to be deep frying a turkey for Christmas and we're wondering about the oil. Does anyone know if the oil goes bad? We use peanut oil and it is in the hard plastic jug that the oil came in. Any advice would be great! I have heard you should dump it after 3 months and I heard 6 months. I know our oil hasn't been used but maybe twice or three times tops.

I would go by what it says on the box. I freeze mine and have used it over a year and a half apart. Do you know how old yours is?

I do what renegade does and have used it several times. What contaminates the oil is the particles that are left in the oil when put back in the jug. Filter freeze and use again.

Same as the last two depending on what kind of rub/injection is used. Like I said I freeze mine between uses but the one time I used a garlic & herb prep. and I'm assuming the garlic got bitter while freezing or something because next time I used it it made the turkey taste horrible. I've used several other flavors with no problems but that one, not so much.

As long as you filter the oil when you pour ir back in the jugs you can reuse the oil till it starts to smell bad or 12 months whichever comes first.

Henkman, I think it was the garlic. I have been told that if you mix garlic with oil in dipping sauces you need to use it and throw away, it will not keep and can actually become toxic. Do not know if this is true or not but that could have been your problem. Although not enough garlic to be toxic but enough for a horiible flavor. Just some food for thought, no pun intended!lol

My husband said last night that the last time we used the oil was last Christmas. It's been in the fridge ever since but I don't think he filtered it. I think it's time for new oil.

Just make sure the turkey is COMPLETELY FROZEN before you put it in the fryer!!! LOL
