I have been allotted 1 to smoke & 1 to cook in the roaster. That way if I mess up the smoked 1 it will be OK...... ( LOL )

Last year, 'da wife bought a big turkey a couple of weeks before the holiday and gave it to her mother to take home and fix for the big family dinner at the in-laws on Thanksgiving day.

We have a cabin about 20 minutes from her folks place, but wouldn't be getting to the cabin until late Wednesday night due to my work.

Thanksgiving morning about 10:00 a.m., 'da wife calls her mother and asks "What time are we going to eat today?", to which her mother replies "When ever you get done cooking the turkey and bring it over"!!!


....needless to say, we had hot dogs for Thanksgiving dinner last year!

They say that you should cook it about 15 minutes a pound ( 1-Bacardi and Coke per lb works too) with indirect heating. I usually close the top vent almost all the way and leave the bottom vents open. At the halfway point add about ten coals on each side, I preheat them in the smokey joe rather than adding fresh coals. That was a 22lb Turkey in the pic, notice the square scar on the top, that was from the cover touching it LOL. This year we have a 19lb Turkey, that should fit perfectly.

Thanks for the info. I think I might try that out. After 1 Bacardi and coke per pound I may not remember what the turkey tastes like.
