Easy Crockpot ideas

We are headed up north for the Tamarack Vintage ride this weekend and after the ride we have a big pot luck. The wife and I were wondering what some of you had for some easy crockpot recipes. Last year we just did meatball with BBQ sauce. Any good ideas?

A couple super easy dinners we make at home:

Throw in a bunch of boneless/skinless chicken breasts with a can or two of cream of mushroom/chicken soup and chop up some veggies or

3-4 lb. chuck roast with a package of dry onion soup mix, a can of cream of mushroom soup, about 6-8 chopped up potatoes and carrots. Heat on low for ~8 hrs. or high for ~4 hrs.

both are delicious and you can't get much easier

The Official Team Kesslers Menu

Chili
2 28 oz cans diced tomatos
4 cans beans
onions, green peppers, and celery if you like
4 lb ground
chili seasoning to taste
For larger groups, cook noodles prior to serving - just like Real Chili :)

Pork Tenderloin
6 lbs pork tenderloin
4 lbs sauerkraut

Lasagna
24 oz ricotta cheese
1 package no boil lasagna noodles
2 lb ground
24 oz spagehetti sauce
(takes a little time to prepare but fantastic - recommend corck pot sleeve for this one)

Beef Stew
4 lb cube beef
4 lbs potatos
carrots
celery
onion
beef broth

The Chili is our staple and the pork is the easiest to make, but all are really good after a long day of riding. We have done a few others, but these seem to be the favorites

5 lb BEAR ROAST,1 can of Cambells Beefy Mushroom Soup ,1 cup of Port Wine, 1 packet of dry Italian dressing and some big hoagey buns !! Great for special occassions !!

Definitely a 2 pot chili dump one night... After that I think we should be creative...

The Snodeo is a special occassion of course.

Shredded Beef

2-3 lb Chuck Roast
1 Pack Dry Aujus
1 Pack Wishbone Dry Itailian Dressing
1 cup Pickle Juice
1 Cup Water
Cook 8 hours on low/Shred with fork/Will fall apart
Serve over mashed or riced potato's or on buns.

We had tuna casserole tonight:

1# noodles (partially cooked)
1 can mushroom soup
1 can cream of chicken soup
1 cup shredded cheddar cheese
1# bag of frozen peas/carrots
2 small cans tuna - drained
Salt/pepper to taste

Fast... easy... yummy

Shredded Pork BBQ Sandwiches

Pork loin (good size, maybe 5 lbs)
1 bottle of sweet baby rays honey bbq
A sprinkle of minced onion on top (optional)


cut pork loin in 3rds or 1/2 and throw in crock pot on low with bottle of sauce...GO RIDING! Return from the beautiful trails and eat. The pork pretty much shredds itself. Just use a fork to seperate the big chunks.

3-4 pound chuck roast
1 jar of pepperchini peppers

Pour entire jar of peppers in crockpot with roast
cook on low for 8 hrs.

Shred when its done, its got a little zip but very good
