A few questions/comments:
What was the top speed before the rebuild? I rode a Triumph for 7 years and the speedo would usually stop at 97. Once when it was very cold it read 103. I figure my actually speed was in the low 90's. It was a very consistent performer from new to 8800 miles when it was sold.
You should be turning 8200 RPM's.....has the tach reading changed since the rebuild?
Does the sled accelerate hard to that speed and just stop....or is it slower to accelerate?
If you pulled the engine and did a top to bottom rebuild I would be looking at clutch alignment and center-to-center distance, it might be off. Check the belt for unusual wear or do the marker test to make sure the clutches shift out all the way.
What is the compression after the rebuild?
