Seems like we all have our usual rotation of meals (see the who decides on dinner thread) and we're all sick of the same old routine. So- do you have a family favorite recipe? I think we should post some of our go-to meals. If I get a few from this site to add to my usual rotation, that would be great. I work full time, so does my husband. I have a 1yr old and 3yr old. I need FAST and EASY meals. Now that it's warmer, we pretty much grill some sort of steak or chicken every night. But I could use some suggestions on side dishes. Who has a good garlic mashed potato recipe? Veggie recipes? Or should I say, yummy ways to prepare various veggies (this is an are I am sorely lacking). Or oh, I would like some good salads for summer.

I'll start-

Stuffed Green Peppers. Prep time- 15 minutes. Cook time: 20 mins
1 lb grnd beef
1 small white onion
4-5 green peppers (tops & insides removed)
Shredded Mozz Cheese
1 Cup Minute Rice
1 Can seasoned tomato sauce
Italian Dressing

Heat oven to 350
Prepare 1 cup of minute rice per directions.
Boil large pot of water- and boil peppers for a few minutes (dont' want 'em too soft)

Once these things are in progress, dice up the onion. In a large skillet, sautee the onion in the italian dressing. I use a fat free one, and just enough to cover the bottom of the pan.
Once the onions are cooked through (2-3 mins), add the ground beef. Brown as usual w/ onions. Once beef is finished, turn off heat. Add in the cooked rice. Mix in some mozz cheese and half of the can of tomato sauce. Place the cooked peppers in a small baking dish. Stuff this rice/meat/cheesy mixture into the peppers. Pour the remaining tomato sauce over the top of the stuffed peppers. Bake for about 20 mins.


Chicken w/ Rice & Veggies-
Prep time- 5 mins, Cook time- approx 30-35 mins
1-1.5lb chicken breasts (I like mine marinated w/ lemon/pepper or italian seasonings)
1 can cream of celery soup
2 cups minute rice
1 small can veggies (peas & carrots are my usual)

This one is super easy. Preheat oven to 350. In a glass baking dish, mix can of soup, one can of water, and 2 cups of minute rice. Stir in drained veggies. Place chicken breasts on top of rice/veggies. Cover w/ foil. Bake for 30-35 mins until chicken is done. That's it.

Parmesan Chicken Breast

Here is a quick easy chicken breast recipe.

4 Boneless Skinless Chicken Breast
1 Jar 16 oz. of your favorite spagetti Sauce (I use Ragu Original)
Italian Bread Crumbs
1 egg beaten
Olive Oil
2 lbs. Mozzeralla Cheese
Parmesean Cheese

In large skillet heat olive oil. Dip breasts in egg and roll in Italian Bread Crumbs. Fry until golden brown. Place in baking dish. Pour spagetti sauce over the top and sprinkle with
parmesean cheese. Top with mozzeralla cheese and bake 30 minutes at 350 degrees.
Serve over pasta or just plain if you're watching the carbs. Towards the end of the baking session I usually add some additional Mozz. I am from Wisconsin. Sometimes I add fresh onion or mushrooms too. You can get creative. Dawn

Santa Fe Tortilla Salad - Prep about 10min.

Dressing
¼ cup bottled Italian Dressing
¼ cup bottled chunky salsa
2 Tbsp lime juice
Salad
2 cups shredded cooked chicken
1 15 ½ oz can Black beans drained and rinsed
1 11 oz canned corn drained and rinsed
1 tomato chopped
1 10 oz bag American salad mix (iceberg, romaine, carrots, red cabbage and radish)
Accompaniments: tortilla chips, sour cream and shredded cheddar cheese

1. Mix dressing ingredients in large bowl add chicken, beans, corn, tomatoes and salad mix; toss to mix and coat
2. Scatter chips on plate top with salad serve with accompaniments

How about a crab salad. This is made with the imitation krab chunks (inexpensive) you could use real crab if desired.

Main ingredients:
1 pkg imitation krab
1 sm pkg small to medium cooked shrimp thawed (optional)
1 fresh lemon
1 bunch scallions
1-2 stalks celery
1-2 tbs dried dill weed
1 ½ -2 cups Mayo, I use miracle whip
1 tbs sugar
1/2 box rotinni noodles or shells doesn't really matter

Put in a fairly large bowl:
Rinse krab and tear it in small pieces, kinda shred it.
chop 1 to 2 stalks celery, I use about 1 1/2 stalks finely chopped
chop scallions, I use the whole bunch and I like it chopped fine
about half a box of the cooked pasta
Squeeze in half the lemon (no seeds)
Add the dill weed
I season with Lawery’s, fresh cracked pepper (you can use some red pepper too if you like a little heat) and a little salt. Sometimes I put a few shakes of Mrs Dashes in too. Mix together.

In a separate bowl:
Mix the mayo, 1 tbs sugar (heaping) and squeeze the other half of lemon. Taste and add more sugar if desired. I usually end up with about 2 tbs but it’s all personal preference.

Combine the mayo mixture in with the krab stuff. Taste and adjust seasoning as desired. Chill.

Potato Salad Dressing

HOMEMADE POTATO SALAD DRESSING



3 cups Miracle Whip salad dressing

1 pint half and half

1 teaspoon salt

Dash of pepper

1/2-3/4 cup sugar

1 tablespoon (rounded) prepared mustard
1 teaspoon celery seed

1/4 cup tarragon vinegar

Beat until creamy. Pour into jar. Keeps a long time in refrigerator.


Mix with potatoes, celery, eggs, radish, or others of your choice.

This is from Midwest Messenger and is excellent.

BBQ Ribs

1 rack of pork ribs
Boil 1 1/2 hours or until tender

Mix 1 can of frozen lemonade concentrate with 1 cup of BBQ sauce of your choice (I use Sweet Baby Rays)

Pour the mix as a marinade over the ribs in a flat pan

Marinade for at least 8 hours, up to 24 hours, longer the better

Grill the ribs on low heat and brush on the remaining marinade



Makes some of the best ribs I have ever had!

Crab Salad- Family favorite

1 pkg imitation crab meat
3-4 roma tomatoes-chopped
1 cucumber-chopped
1 pkg bow tie pasta-cooked

Mix in large bowl with Hidden Valley Ranch Dressing (to taste) and your done.
The dressing soaks into the pasta alot so you might want to wait until your ready to serve to add the dressing.



Chicken Noodle Casserole

1/2-3/4 pkg wide egg noodles
3-4 boneless chicken breast cubed and cooked
1/2 pkg frozen peas-keep frozen
1 can cream chicken soup
1/2 cup milk
salt & pepper to taste
I add a tablespoon of chicken base to add more flavor

Topping:
1 Tablespoon of butter
1/2 cup bread crumbs

Mix ingredients in sauce pan after cooking chicken, put in casserole dish and bake at 350 for 20 minutes, stir then melt butter add bread crumbs and put on top, bake an additional 10 minutes


I prep alot of meat on the weekend so I can make quick meals during the week, brown hambuger with onion and green peppers, cubed or thin sliced boneless chicken breast. That way all I have to do during the week to make a meal is thaw out the meat and mix ingredients. I also us a food saver which keeps the food fresh for months!!

Julie - do you cook the egg noodles before hand or let them cook in the oven?

This one seems to go over pretty good with kids.

1 lb of ground beef<O:p</O:p
1 package of taco seasoning<O:p</O:p
1 cup Shredded Cheese<O:p</O:p
1 package of croissants (1 package for 2 bakes)<O:p</O:p
Toppings for tacos<O:p</O:p

Brown ground beef and mix in taco seasoning. Roll out 2 croissant triangles into a rectangle. Place taco beef on top of the croissant triangle and top with cheese. Then place another rectangle on top and press the edges to seal in the beef and cheese. Bake according to the directions on the croissant package. Top with desired taco toppings

Add milk till several charms hit the table.
Toss gently with spoon.

If Lucky Charms are not in season, Trix or Coco Krispes will work fine.

Cheesecake

Just made 2 last night, I give them away to friends.

2 cups graham cracker crumbs
2/3 cups sugar
3/4 stick butter
bag of chocolate chips
Make a graham cracker crust in a springform pan using sugar, butter, and graham crackers. Spraying the pan with Pam will help later. Pour the choc chips on the crust, bake 7 mins at 325.

Meanwhile, beat 2 1/2 lbs cream cheese, 5 eggs, a little vanilla, and about 1 1/2 cups sugar. Don't beat the **** out of it, as it will cause cracking. Also, if the eggs and cream cheese are at room temp it helps a lot.

This is for a plain cheesecake. This recipe responds well to flavors, so if you want put in 1/2 cup of Bailey's, or amaretto, or peanut butter or whatever.

Pour the mix into the crust, top with something (like Heath bar crunch or whatever) if you wish.

Put the cake in the oven at 325 and leave it alone! At about an hour, open and kinda shake it, the center should still not be set up. Give it another 15-25 mins, don't open oven. Turn off oven, leave cake in there, don't open oven. After a couple hours (or tomorrow morning) open the oven and there ya go!

Turkey Meatballs in Wine Sauce - Lo Cal

Make a double or triple batch of the meatballs and freeze them for easy dinner prep

Meatballs
1egg white
1 cup soft bread crumb
1/4 tsp dried thyme crushed
¼ cup finely chopped onion
2 Tbsp skim milk
½ tsp salt
Fresh ground pepper to taste
1 lb ground raw turkey meat
Non-stick cooking spray

Wine sauce
2 cups sliced fresh mushrooms
1 cup water
2 Tbsp cornstarch
1/3 cup white wine
¼ cup finely chopped onion
1 Tbsp instant chicken bouillon granules
2 Tbsp fresh snipped parsley
2 cups hot cooked noodles


In medium bowl stir together egg white, bread crumbs, ¼ cup onion, milk, salt, thyme, and pepper. Add turkey and mix well. Shape into 1 inch meatballs

Spray 9x13 baking pan or dish with cooking spray. Place meatballs in dish bake uncovered at 350 for 30-35 minutes until no longer pink. Drain off any juice let meatballs cool. Then cover and chill for 2 to 24 hrs. After chilling is when you would freeze them

Before serving, spray a cold skillet with cooking spray, add mushrooms and onion. Cook until tender. Stir together water, cornstarch and bouillon. Carefully add to mushroom mixture in skillet. Cook and stir until thick and bubbly. Add chilled meatballs and wine, heat though. Stir in parsley. Serve over hot cooked noodles
Makes 4 servings 298 cal per serving

worchester sauce to taste
red hot sauce (optional)
A-1 steak sauce 1 tablespoon
1 egg
chopped onion
chopped green pepper
chopped mushrooms
bread crumbs 1/3 cup
salt to taste
pepper to taste
combine all of the above
1 loaf french bread/cut in half length wise
spread thin layer of above mixture on bread (about 3/8" thick)
bake in oven at 350 until almost done (middle rack)
place sliced toamto's on top and cover with slices of american cheese
put under broiler until cheese starts to bubble and brown
cut into 2 or 3 inch pieces
