I've been working hard at perfecting ribs/pulled pork to my taste buds. Finally tonight i think we got it. This charcoal smoker can hold temps for 12 hours maybe 14 with almost no monitoring!

8.5 hours and this pork butt roast was done!
Gosh the roast was only $13 and we easily could feed 6 peeps! Whats your favorite thing to smoke?

I use the same smoker. My favorite are the Baby Back Ribs with a Dry Rub overnight. We're not a big fan of brisket but the Flat Iron Steaks are great. Salmon on a Cedar Plank and the Pulled Pork are good choices too.

This pic was from earlier this summer when I finished off the ribs with a sauce along with a Dry Rub.

Well done grillmeisters....

Thinking I have to figure out a way to get one of these next year - really a rib fan. My regular Weber charcoal holds temp pretty well but nothing like the Smokey Mountain.

Our favorite s a big salmon filet. Brined overnight, then smoked and glazed with Door County maple syrup. Served with pumpernickel rye and a dill cream cheese. Also just smoked some side pork for home made bacon.

Yummy, yummy. Man I love smoked food!!

What do you guys use in those smokers, just wood chips or small round wood?
On a long smoke do have keep adding charcoal?
I'm just using electric smoker now but may pick-up another come spring.

Things I like to smoke beside ribs, Mac n cheese, baked beans, whole chicken brined and snacked on cold, cream cheese poppers wrapped in bacon.
I also had old round steak that I cut up marinated for jerky, turned out great.

Eagle,
I use chunks of either Apple, Cherry, or Hickory. I soak them in water beforehand so they last longer. Usually 2 or 3 will last throughout the afternoon. I use the Charcoal method because a guy I work with got me interested in smoking and he uses charcoal. The Weber Smokey was a logical choice and I'm very happy with it. Pretty basic, nothing to wear out and well designed.
