Making maple syrup

Pancakes, waffles, drizzle over the top of cooked vegetables (it caramelizes-works great if your kids don't like their veggies!), poured over vanilla ice-cream, Maple Syrup old-fashions..... The list goes on and on..

What's a maple syrup old fashion?

There's several different ways to make the Maple Old Fashioned. I typically do a tablespoon of maple syrup stirred with a couple ounces of whiskey or brandy, drop in the ice cubes and then just a splash of bitters and freshly squeezed lemon juice. You can use lemon peel in place of the juice, your choice. It's a nice sipping drink and another great use for maple syrup. Experiment a little and enjoy!!

Just talked to my friends and they are still at it. She said she hoped today or tomorrow they will be done. Getting wore out. They are up to 4000 finished gallons of syrup. I asked the how many taps total they had and they had 1900 and as a family they have 9000. They are having a bucket washing party next friday. sounds like fun

We are still at it as well. We are a small backyard group of friends that do this because there isn't much else to do in the spring. We have currently 9 gallons of finished syrup and we will boil down are last 200 gallons of sap this weekend.

My friends operation is just a family op. There is the mom and dad there two daughters one is married so her husband and there son and his wife and a uncle helps out friends help out when they can alot of work but the pay off is worth it they cook in the mom and dads backyard in the sugar shack their key is having the right equip. for cooking

Sweet stuff!

I was over at rp7x's yesterday and took a pic of the stove and cooker since he "weatherized" it. I also sampled some of the finished product and it was awesome!

Then I went back last night and got some shots of the stove and cooker glowing hot! It looked pretty cool in the dark. The stove was glowing and fire was coming out of the stove pipe.

So I have a question. What is the stainless pot and copper tubing for? I have never seen a setup like that on other sap boilers.

I must say, the best maple syrup I've had is Mrs. Butterworth's. I have tried a few 'homemade' versions... It's usually not very sweet and really watery. I am sure some it is ok though.

john / I keep the upper pot full so it pre heets in the cooper tubing to about 140* then I never lose my boil , tonight is the first night that it's shut down in 4 weeks , as far as how good it is , if you have any bad teeth they will be hurtin , its sweet

This syrup was very good and quite thick compared to some I've seen. It was as good as any syrup I've ever had.
