Basically the "must see" is all out doors. Fishing, of course, but if mountain biking is you game, the Pillsbury state foresting is spectacular.

Had there been snow, the Pillsbury "loop", Snow Way One, and surrounding trails, rival that of the north shore. But hiking & mountian biking can still be a blast. Kill scenery, and killer hills, with plenty of wild life running around.
For the single track mountain bikers, the Cuyuna Recreation Area is the place to be.

About as close to really mountain riding as it gets. Something for everyone. From the smell the roses crowd, to experienced, to extreme, Cuyuna has it all.
With the weather we've been having, ice skating an entire lake is not out of the question. Thousands of smaller lakes to explore. Some areas may be a little bumpy, but we have pretty quality clear ice on most lakes.
A nice place for a shorter hike would be Fritz Loven Park close to Zorbas.

Stoney Brook winds it's way through the entire park. Easy walking trails, wildlife, and fire pits to have a little fire. There's more trails than the map shows. DNR & county administered land borders Stoney Brook to the north east of the park. You can hike all along the stream, or dream a bit while walking the snowmobile trail.
Someone else will have to chime in on night life. I mainly live in the day light.
