Ha. We managed to get a couple of nights there that trip. We had wanted one more night but they were sold out. It was our last day of riding so not too big of an issue. I've eaten there many times but that was the first time we stayed there. Was nice other than no real breakfast option.

We were full a couple different times when we were up there trying to find rooms, so I think they still do ok in the winter at least.

To be enforceable, contracts require offer, acceptance, and consideration. Offer and acceptance can be verbal (per contract law, but good luck proving it) but consideration means some money has to change hands - it can be as low as a $1 down pmt. If no dollars were exchanged, it's not enforceable.
