I ordered the stainless steel hinges, worth it to me. Roof vent to me is just a covered hole in the roof waiting to leak. imo
Your trailer, your $$$$build it how you like.

Get the hinges, you'll regret the steel ones in one season. Get the side vents as well, not the roof vents.my .02

I would go with the S.S hinges. I would also recommand a vent(s) of some kind. My trailer did not have any vents and there was alot of moisture inside the trailer which will cause rust. Put a roof vent in and the moisture problem is gone.

I've had enclosed trailers with and without roof vents. Bottomline, I would never order or buy a trailer without a roof vent. Ventilation is the key to storing sleds in trailers in the off season. If you plan on storing sleds in it and in storing the trailer in a building it's not as bad of a problem. But if your keeping the trailer outside a roof vent is a must especially if you have a darker color trailer like black. I work at home so I open up my front and rear ramps when ever possible along with the roof vent. Today when I opened it up it was 89 degrees inside with 20% humidity. We haven't even begun to get into warm weather yet. Another thing is I put Damp Rid containers on the floor to absorb the moisture. These thing work and I change them out when needed.

I've wondered about the venting issue myself, because that's half the reason I would like to buy an enclosed trailer one of these years.

Can you hook up a fan to the trailer, perhaps that is solar powered, to keep air circulating and moisture and heat/humidity out?

My current enclosed is a 2010 R&R 7 x 16. One thing I really like about the trailer is the fact that it has vents on each side. One of the options that I added was a roof vent. What I have been doing for years and it really helps is like I said use Damp Rid. On my current trailer I use 2 Damp Rid containers on the floor (1 up front & 1 in the back). For a trailer like 20' + the v, I used 3 on the floor (added 1 in the middle). I also used the Damp Rid hanging moisture absorbers that I put one hanging from the handlebars on each sled. You would be surprised at the amount of moisture these thing absorb. I change them out as needed. My trailer is a light pewter color. As for a solar fan, they make them for RV/trailers. Here's one that I ran across.
