the war department is in the kitchen making strawberry jam right now.Time for me to have to run to a job or something before I get recruited in to making jam.I will check back in 4 hrs or so
I like the Thimbleberry Jam from the UP !! anybody got a recipe? YUM!! lots of blueberry and blackberry blossoms this year, hope they dont dry up!
Prepare jars, bands and lids
Use equal parts of Thimbleberries and sugar
Mix together and let stand 4 hrs to overnight
Pour mixture into heavy sauce pan, heat to a full rolling boil over high heat stirring constantly with a wooden spoon. Cook at a rolling boil stirring constantly for 4-5 minutes or until mixture turns from cloudy to clear. Remove from heat continue to stir for a minute or 2 to settle any foam, if there is still foam on top, skim with a clean metal spoon and discard. Pour into prepared jars leaving ¼ inch headspace. Seal with prepared lids and bands. Process in boiling-water bath for 5 minutes
High jacked from shortcake to Jam.....
My grandmother made thimbleberry jam using the same above ingredients BUT put it on the stove and did not wait 4hrs to overnite. She used to sell it out by the road at the camp and we had repeat customers most years. Then it was a rarity that people came back to buy from a roadside stand. As a little girl I would go with the grandparents picking thimbleberries early in the morning until around noon, go back to the camp, have lunch, then clean the berries and then make the jam. One of the best spots for the berries back then was up by Copper Falls. To date thimbleberry jam is my favorite.
Oops, sorry about the reminising, but talking about jam got me to go waaaay back and the fun I had picking and cleaning the berries.
