Last year I had an opportunity to visit the Jack Daniels distillery in Lynchburg, TN. It was one of the best tours I have ever been on. If you're ever in the area, I highly recommend it. One of the major differences in whiskey is how it’s stored (and for how long). JD for example NEVER re-uses their barrels. The aging process allows the whiskey to soak into (and out of) the pores of the wood. Over the course of this 7-10 year process, this happens many times with the changing of the weather. As pointed out during the tour, the location of the barrels in the exact same distillery house can make all the difference in the world. Those up near the top of the multi story building see more weather extremes than those near the floor, which results in a much different result. At any rate, this may not answer your exact question, probably more than you ever wanted to know. Also, if you want to know any other history on JD, just let me know. It was a great tour with lots of interesting trivia shared. As an FYI- Jack used to pay his workers with bottles of whiskey, and YES! They still do it to this day!!!! It's referred to by the workers as "Black Friday." One last one and I'll let it be: The "rumor" of the JD famous #07 is that 07 barrels of some of Jack's best whiskey were "misplaced." As each of the seven were found, Jack went to the barrel and mark it with the number "07" to indicate it was one of the "07" That's all for now...
