Smoking Eggs

Tried smoking eggs for the first time yesterday....holy crap, where have I been. They were awesome. I have been smoking foods for quite a few years and had never heard

Anyone else ever smoke eggs before?

How do you keep them lit? Oh, come on, someone had to say it.
But seriously, did you smoke them in the shell or out? How did you smoke them? Time? Boiled first? I eat pickled eggs all the time, and would like to try. Have some marinating in the frig now.

Seriously though, they do sound good and I wouldn't mind trying them.

They are the easiest thing I have ever smoked...
You hard boil them, they are best if you pull them a bit early.
Peel the eggs...eat one to make sure they are good and a bit soft
Place your favorite wood in your smoker (I used a mix of oak and apple)
Smoke at 180 for no more than 30 minutes
Cool them down quickly...

You can eat them the way they are, pickle them, or make them into deviled eggs. We ate them and made deviled eggs.
You are better off pulling them early, DO NOT leave them in more than 30 minutes or they will get a chewy outside, which really is not that bad (my first batch went for 40 minutes...)

I highly recommend smoking-meat.com Jeff has a ton of recipes and hints. His rub and BBQ sauce recipe is worth the little bit he charges.

A guy at work just made us scotch eggs using his smoker. He did the hard boil first as you mentioned above, but then covered them in sausage and smoked them. Deeeeeelicious! Almost as good as Lake Superior Brewery's eggs...almost ;)

Had a family get-together Sunday and smoked a turkey for it. Decided since the smoker was fired up I'd try a few eggs. So I left in what was left of the cherry wood and added some maple. A half hour later, some killer smoked eggs!
