They are the easiest thing I have ever smoked...
You hard boil them, they are best if you pull them a bit early.
Peel the eggs...eat one to make sure they are good and a bit soft
Place your favorite wood in your smoker (I used a mix of oak and apple)
Smoke at 180 for no more than 30 minutes
Cool them down quickly...
You can eat them the way they are, pickle them, or make them into deviled eggs. We ate them and made deviled eggs.
You are better off pulling them early, DO NOT leave them in more than 30 minutes or they will get a chewy outside, which really is not that bad (my first batch went for 40 minutes...)
