<hr size="2" width="75%">I have to tell ya I learned a thing or two about
portion control while in the hospital cardiac care ward for a week last fall. (Actually fairly decent victuals in a hospital, how about that!) I was astonished at the fact that I could have much smaller portions and not be hungry shortly after. I also refuse to give up ice cream, but I have discovered that it is possible to
satisfy the craving with a small (½ cup) portion, while anything more amounts to gluttony. Hey it's working, I've lost 20 pounds so far (of course the cardiac rehab program & exercise helped too); now to see if I can knock off a 'nuther 20 and get back to my "fightin' weight" of 175-185!
We also used to have a brilliant, creative chef,
Jeff Beeson, who had a small restaurant (Convivo) in a nearby strip mall in Phoenix from 2001-2005. Incredibly creative menu options, all very pleasing to both the eye and palate, relatively
small portions, almost in the French style, but with a unique southwestern theme; extremely pleasant and satisfying fare, yet no need to forgo appetizers or desert, and no "doggy bag" needed! Also no need to loosen da belt, or use a "tummy sling" as you stagger to the car after the meal, just a very pleased, satisfied feeling.
This was the antithesis of the
Claim Jumper experience, where they almost have to bring your dinner, in Fred Flintstone portions, to the table in a wheelbarrow! Oink!
Jeff Beeson was a brilliant rising star in the restaurant business. A whole bunch o' "chefs" could have learned a lot from him! I'm so sorry we lost him at such an early age!
